Energizing Smoothie Bowl

Red Bull has nothing on this. I had so much energy after eating this. Drinking this? Devouring this.

I had a huge bag of delicious plump cherries that I needed to do something with before I had to freeze them. Don’t you love summer for all the fresh fruit? What pairs well with cherries? Chocolate. Didn’t see that one coming, did ya? One day I will cut back on my chocolate consumption. But not today. Today is too good for that with this smoothie bowl. I guess all that cherry chocolate ice cream I had as a kid inspired this one. But as you can see I’ve grown up a bit because there’s green stuff in this bowl-spinach. Counts right?

The flavor of this smoothie is absolutely delicious. It tastes more like dessert without the calories. Definitely a good way to start the day. There is so much goodness going on in this bowl! Chia seeds, cherries, dark chocolate, almonds. Not to mention all the fun that is sitting on top! Coconut, almonds, chocolate, and figs.

I used our amazing blender, the Oster VERSA to the blend this smoothie bowl. I love this thing and how I can just hit the smoothie button and the consistency will come out perfect everytime! We use it for so much more than smoothies; soups, blended mocha, and the walnut powder that I used in the brownie granola bars

Ingredients

  • 1 cup cherries
  • ¼ cup raw whole almonds
  • 1 tablespoon cocoa powder
  • 2 teaspoons honey or pure maple syrup
  • ½ cup frozen spinach
  • 1 cup almond milk
  • ¼ teaspoon vanilla extract
  • 2 tablespoons chia seeds
  • Toppings:
  • almonds, shredded coconut, chocolate chunks, figs

Instructions

  1. Blend all ingredients until desired consistency.
  2. Top with whole almonds, shredded coconut, chocolate chunks, and figs
